Pasta al Forno

Ein echter italienischer Seelenschmeichler aus dem Ofen: Deftig-würzige Salsiccia, Knoblauch und Zwiebeln brutzeln hier gemeinsam mit frischem Basilikum und werden mit einem guten Schuss Rotwein und fruchtigen passierten Tomaten zu einer tiefen, aromatischen Sauce eingekocht. Zusammen mit bissfesten Rigatoni-Nudeln wandert das Ganze in die Auflaufform, wird großzügig mit feinstem Mozzarella sowie Parmesan getoppt und im Ofen goldbraun und herrlich cremig überbacken. Ein absolutes Festessen für alle, die ehrliche, mediterrane Ofenküche lieben!

Ingredients Needed

Fleisch & Fisch

  • 5 Stk. Salsiccia

Gemüse

  • 1 Stk. Zwiebel
  • 2 Zehe Knoblauchzehe

Flüssigkeiten

  • 3 EL Olivenöl

Kräuter

  • 2 EL Basilikum frisch

Soße

  • 2 EL Tomatenmark
  • 700 ml Passierte Tomaten

Getränke

  • 100 ml Rotwein

Trockene Zutaten

  • 1 TL Italienische Kräuter

Hauptzutaten

  • 500 g Rigatoni

Milchprodukte & Eier

  • 150 g Mozzarella
  • 50 g Parmesan gerieben

Work Steps

  1. Zwiebel würfeln und auch Knoblauch fein hacken (beides separat aufbewahren!)
  2. Basilikum klein hacken.
  3. Salsiccia aus der Pelle rausfrimeln.
  4. Die Zwiebeln mit Öl glasig anbraten und wenn glasig kann man den Knoblauch hinzugeben.
  5. Jetzt bröselt man die Salsiccia dazu (man kann auch mehr als die 5 nehmen wenn man lieber mehr Fleisch hat) und brät alles an.
  6. Dann kommt der Tomatenmark dazu den man einfach nu einrührt und ein Minütchen mit brät.
  7. Man gibt dann den Rotwein dazu und lässt diesen verköcheln.
  8. Jetzt löscht man das ganze mit den passierten Tomaten ab.
    Salz & Pfeffer nicht vergessen.
  9. Dieses lässt man jetzt für mindestens 60 Minuten bei kleinster Flamme vor sich hin köcheln.
  10. Dann gibt mat den Basilikum dazu und in der Zwischenzeit kocht man schon mal die Nudeln al Dente (die werden noch im Backofen weiter kochen also nicht zu weich kochen).
  11. Wenn die Nudeln fertig sind vermischt man sie mit der Soße.
  12. Zeit alles in einer Backofenschüssel aufzuschichten. Man gibt zu Erst mal eine Hälfte rein und dann gibt man Mozzarella drauf.
  13. Jetzt gibt man dann den Rest der Nudeln drauf und wieder Mozzarella drüber mit dem Unterschied dass man jetzt auch den Parmesan drüber streut.
  14. Das Ganze lässt man dann bei 180° im Backofen backen - Kann auch mal länger sein - Einfach schauen wann der Käse gut geschmolzen ist und etwas braun.
