Schichtfleisch aus dem Airfryer

Der ultimative Grill- und BBQ-Klassiker, genial übersetzt für die moderne Küche: Saftiger Schweinenacken, würziger Bacon, rote Paprika und Zwiebeln werden hier Schicht für Schicht mit kräftigem BBQ-Rub und rauchiger Barbecuesauce verfeinert. Nach guten 2,5 Stunden intensivem Schmoren im Airfryer verwandelt sich das Fleisch in ein butterzartes Geschmackserlebnis, das fast von alleine zerfällt. Herrlich deftig, wunderbar rauchig und der beste Beweis, wie vielseitig die Heißluftfritteuse sein kann!

Tipp für das beste Ergebnis: Dieses Rezept wurde speziell für den Cosori Turbo Tower Pro Smart Airfryer entwickelt. Bitte beachte, dass das Gericht unbedingt im unteren Korb zubereitet werden muss! Nur dort kommt die integrierte DualBlaze-Technologie mit der gleichzeitigen Hitze von oben und unten voll zum Tragen. So schmort das Schichtfleisch absolut gleichmäßig, bleibt herrlich saftig und muss während der 2,5 Stunden nicht gewendet werden.

Ingredients Needed

Fleisch & Fisch

  • 2.200 g Schweinenacken
  • 600 g Bacon Streifen

Trockene Zutaten

  • 5 EL BBQ-Rub

Gemüse

  • 3 Stk. Paprika rot
  • 3 Stk. Gemüsezwiebeln

Saucen & Dips

  • 1 Gl. BBQ-Soße

Work Steps

  1. Das Fleisch schneidet man in Scheiben von ungefähr 2 cm Dicke.
  2. Diese Streifen legt man in eine Arbeitsschale und bearbeitet sie mit dem BBQ Rub. Ich habe 5 EL angegeben aber es kann auch sein dass man mehr brauch. Ist etwas vom Fleisch selbst abhängig, also was dieses aufnimmt, und wie viele Stücke Ihr zusammen bekommt.
    Wichtig auch → Alle Seiten ruben!
  3. Zwiebeln in Scheiben schneiden (+-1 cm in der Dicke) und nicht auseinander nehmen.
  4. Die Paprikas auch in grosse Scheiben schneiden.
    Es zählt für die Paprika genau so wie für die Zwiebeln dass eventuell noch mehr benötigt wird als hier angegeben - Abhängig vom Fleisch und eurem Gerät.
  5. Beim Garkorb befindet sich unter eine Platte um einen gewissen Abstand zwecks Luftzirkulation zu halten. Diesen muss man entfernen da er später für etwas anderes benötigt wird.
    Dan belegt man den Boden des Garkorbes mit Bacon - Auch hier kann es am Ende so sein dass sie mehr oder weniger als angegeben benötigen - hier spielt die Größe Ihres Gerätes mit.
  6. Jetzt kommt das Fleisch dran. Wichtig ist es dieses hier hochkant zu stapeln und in der Reihenfolge:
    Fleisch
    Zwiebel
    Fleisch
    Paprika
    und wieder von vorne...
  7. Wenn alles gestapelt ist gibt man einem ganze Flasche (oder ganzes Glas) BBQ Soße über das Ganze.
  8. Jetzt überdeckt man alles mit Bacon - dieses dient als Schutz und auch Geschmacksgeber.
  9. Jetzt kommen wir zu wichtigen Schritten um das Verbrennen des oberen Fleisches zu vermeiden!
    Zu Erst gibt man über den Bacon eine Schicht Backpapier.
  10. Über dieses legt man dann Alufolie was als endgültige Hitzeschicht fungiert.
  11. Jetzt kommt der Boden den wir ganz am Anfang raus genommen haben ins Spiel - diesen setzen wir auf die Alufolie und drücken alles schön fest (nicht übertrieben).
  12. Danach schaltet man den Cosori (in meinem Fall) unter dem Modus "Airfry" auf 190° und lässt Ihn im Ganzen 2,5 Stunden brutzeln.
    Je nach Gerät müsst Ihr Zwischendurch immer prüfen und es kann auch eventuell länger dauern. Dies hier ist halt gezielt auf den Cosori Turbo Tower Pro aufgebaut.
    Der Cosori kann zB immer nur maximal 60 Minuten laufen und dann muss man Ihn wieder starten. Der Timer geht halt nicht länger in diesem Modus (ist ja nicht der Trocknungsmodus :P )
  13. Pommes oder Bratkartoffeln passen sehr gut dazu wie auch einfach nur ein simples frisches Baguette :)
