Senf Filetpfanne

Ein echtes Pfannen-Glück: Saftige Medaillons vom Schweinefilet, eingebettet in eine feine, cremige Senfsauce mit angenehmer Würze. Ein schnelles Wohlfühlgericht, das hervorragend zu Spätzle, Kroketten oder einem frischen Baguette passt.

Ingredients Needed

Fleisch & Fisch

  • 800 g Schweinefilet
  • 200 g Speckwürfel

Gemüse

  • 400 g Champignons
  • 1 Stk. Zwiebel
  • 2 Zehe Knoblauchzehe

Flüssigkeiten

  • 150 ml Gemüsebrühe

Milchprodukte & Eier

  • 250 ml Sahne / Rahm

Soße

  • 4 EL Senf

Gewürze

  • 2 Pr. Salz
  • 2 Pr. Pfeffer

Kräuter

  • 1 Bd. Petersilie

Work Steps

  1. Das oder die Filet(s) schneidet man in Medaillons von ungefähr 4-5 cm dicke.
  2. Falls man keinen gewürfelten Speck genommen hat muss man den jetzt klein schneiden.
  3. Die Pilze viertelt man am Besten damit sie mehr Biss und Geschmack behalten.
  4. Zwiebeln und Knoblauch schneidet man dann natürlich auch in kleine Würfelchen.
  5. Jetzt röstet man den Speck gut an und wenn das getan nimmt man Ihn wieder aus der Pfanne aber Achtung nur den Speck, das Fett lässt man drin um weiter zu arbeiten.
  6. Jetzt is es Zeit die Medaillons anzubraten. Jede Seite für sich und das salzen und pfeffern nicht vergessen. Das Fleisch soll nicht durch sein, nur schön braun angebraten.
    Wenn es auf beiden Seiten braun ist nimmt man dieses auch wieder aus der Pfanne.
  7. Jetzt ist es an der Zeit der Pilze. Hier ganz wichtig: Fett aus der Pfanne raus falls noch vorhanden.
    Warum? Num wäre fett drin würden die Pilze dieses zu Erst mal aufsaugen und wäre nicht sonderlich lecker danach.
  8. Wenn etwas angedampft kann man die Zwiebeln auch schon dazu geben und wartet dann bis sie glasig sind.
  9. Dann kommt wieder der Speck hinzu und auch der Knoblauch. Auch hier wieder salzen und Pfeffern nicht vergessen.
  10. Jetzt löscht man dann das ganze mit Gemüsefond ab und gibt die Sahne mit dem Senf rein.
  11. Wenn das ganze aufgekocht ist gibt man auch das Fleisch wieder rein.
  12. Jetzt Deckel rauf une einige Minuten bei sehr kleiner Hitze köcheln lassen.
  13. Die Petersilie hackt man klein um danach dann übers Fleisch zu geben.
