Sauce Bolognese nach Frank Art

Es gibt sehr viele Möglichkeiten eine Bolognese Sauce zu machen (Achtung - nicht Ragù alla Bolognese - das ist ein anderes Rezept und das kommt auch noch).
Dieses hier hatte als Basis das Rezept meiner Oma was ich dann im Laufe der Zeit zu meinem Geschmack hin verbessert mit Tips von einem italienischen Koch wie ich hier und da noch verbessern kann.

Das Resultat seht Ihr hier in diesem Rezept - Das ist mein Endresultat nach etlichen Jahren.

Ingredients Needed

12 Servings

Gemüse

  • 500 g Tomate (Bonbon)
  • 1.200 g Tomaten Roma
  • 5 Stk. Karotte
  • 1/2 Stk. Fenchelknolle
  • 720 g Schalotte
  • 4.800 g Tomaten (geschält)

Kräuter

  • 180 g Petersilie
  • 180 g Koriandergrün
  • 180 g Petersilienmischung
  • 180 g Basilikum

Soße

  • 1.320 ml Passata
  • 200 g Tomatenmark

Gewürze

  • 400 g Massa de Alho
  • 3 Tüt. Maggi Fix für Spaghetti
  • 2 Tüt. Maggi Fix für Lasagne

Trockene Zutaten

  • 10 Stk. Lorbeerblätter

Fleisch & Fisch

  • 1 1/2 kg Hackfleisch
  • 500 g Filet Américain
  • 8 Stk. Salsiccia

Hauptzutaten

  • 3 Stk. Eigelb

Flüssigkeiten

  • 200 ml Olivenöl
  • 200 ml Butter (flüssig)

Work Steps

  1. Zur Info: Manche Zutaten stehen mehrmals drin da sie Unterschiedlich genutzt werden!

    Man nimmt einen riesen Topf (wir nutzen hier ein 14l Topf) und füllt die kleinen Tomaten (500 g) rein.
  2. Danach nimmt man die großen Tomaten (1,2 kg) und schneidet sie in Viertel in direkt in den Topf.
    Nicht vergessen den Topf auf mittlere Flamme an zu machen damit auch alles heiß wird.
  3. Die Karotten/Möhren schält man und schneidet sie in kleine Scheiben auch direkt in den Topf rein.
  4. Dann kommt der Fenchel dran den man auch zerstückelt - ich denke ich brauche nicht immer zu erwähnen dass man das Gemüse vorher wäscht.
    Die Stücke müssen nicht winzig klein sein da wir später mit dem Stabmixer durch gehen werden.

    Allerdings nur die Hälfte!! (Achtung: nimmt man zu viel schmeckt die ganze Soße nach Fenchel und ist somit nicht sonderlich genießbar)
  5. Eine menge Gewürze kommen jetzt rein. Viele kann man selbst frisch zerhacken aber ich kaufe immer fertige Töpfchen - Warum? Nun so habe ich immer die identische Quantität :)
    Was kommt den jetzt rein (meine Töpfchen haben jeweils 90g)?
    1x Koriander
    1x Petersilie
    1x Petersilienmischung (diese besteht aus: Petersilie - Sonnenblumenöl - Schalotten - Knoblauch - Salz - roter Chili)
    6x Schalotte
    Meist nutze ich das Basilikum auch aus solchen Töpfchen, was dann 2 hier wären, aber man kann auch frisches Basilikum nehmen - dann muss man 3 ganze Pflanzen nehmen!
  6. Jetzt kommt dann die Flüssigkeit hinzu, Tomatenflüssigkeit lol :)
    Zu erst 2 Flaschen Passata (660ml/690g) und dann 6 Dosen geschälte Tomaten (800g)
  7. Und dann fehlt noch der gute Knoblauch :)
    2 Töpfchen "Massa de Alho" (200g pro Topf) - Dies ist eine Salz/Knoblauch Mischung

    Jetzt das ganze mischen und 10 Minuten auf maximaler Hitze (Stufe 9) erhitzen
    Nicht länger denn sonst brennt es an!
    Nach 10 Minuten setzt man die Hitze auf Stufe 4 herunter und schmeißt ein paar Lorbeerblätter hinein - am besten etwas zerreiben
  8. Danach weiter kochen lassen und alle 10 Minuten (sehr wichtig) komplett umrühren!
    Nach einer halben Stunde ungefähr ist es dann Zeit das ganze zu pürieren (ich warte immer so +- diese Zeit damit die Möhren usw. weich sind und sich leichter pürieren lassen).
    Und ja die Lorbeerblätter werden mit zerkleinert :)
  9. Außerdem ist es jetzt Zeit die 3 Päckchen Maggi Fix für Spaghetti Bolognese und die 2 Päckchen Maggi Fix für Lasagne...
    Habe da nie genau heraus gefunden warum aber meine Oma hat das so gemacht und der Geschmack wird damit noch etwas verfeinert.
    Auch kommt noch eine Tube Tomatenmark hinein.
    Danach lässt man das ganze kochen und kochen (während Stunden) unter ständigem rühren (alle 10 Minuten)
  10. Während die Tomatenbasis köchelt präpariert Ihr das Fleisch und werft es dann nach dem braten in den Topf rein.
    Der Anfang macht 1,5kg Hackfleisch - Bitte nehmt ein sehr gutes Hackfleisch (also kein Aldi Hack oder hier in Luxemburg um Himmelswillen kein
    Cactus Fleisch - außer natürlich Ihr wollt euch eure Soße versauen)
    Jetzt kommen 0,5 kg "Filet américain" hinzu.
  11. Danach kommen 10 Salsiccia (italienische Wurst) ohne Haut hinein (normalerweise 6-8)
    Hinzu kommen noch ein paar Eigelb - Wieso ein paar? Nun es ist mal so mal so...
    Es hängt vom Fleisch ab - Da dieses Mal die Salsiccia ganz frisch waren und trockner habe ich 6 Eigelb am Ende drin gehabt - Es hängt da eben am
    Ende von der gewünschten Konsistenz des Fleisches ab.
    Ich mache immer zu Erst 2-3 rein (je nach Größe) und dann sehe ich beim mischen ob ich noch ein paar brauche...
    Und auch hier kommen Gewürze rein:
    2x Schalotten
    1x Koriander
    1x Petersilie
    1x Petersilienmischung
    Zusätzlich kann man auch noch etwas Basilikum und/oder Knoblauch hinzu geben.
    Das ist halt je nach Geschmack...
    Nach einigen Minuten intensiv Mischung, ja ich nutze meine Hände dazu, hat man dann einen schönen Fleischbrei.
    Je nach Salsiccia Zustand muss man die extra durch die Finger pressen und man mixt länger damit es eine schöne uniforme Masse wird.
  12. Zum anbraten möchte ich noch einen Zusatzpunkt machen:
    Ich mische hier etwas Olivenöl und etwas Flüssigbutter.
    Das gibt etwas Geschmack mit rein und vor allem wenn man das Fleisch rein gibt spritzt das Öl/Fett nicht massiv aus der Pfanne heraus.
    Es dauert einige Minuten bis das Fleisch gar ist - man muss immer wieder umrühren sonst brennt es zu sehr fest.
    Es ist als würde man ein Rührei zubereiten.
    Achtung: man kann nicht das ganze Fleisch auf einmal braten :)
    Logischerweise schüttet man dann jede Pfanne immer wieder zur Tomatenbasis und rührt das ganze um.
    Dann wieder neues Öl und Flüssigbutter und das ganze Spielchen von vorne
  13. Am Ende hat man dann eine schöne Soße die man Stundenlang kochen sollte (alle 10 Minuten umrühren)
    Meist fange ich morgens früh (9:00) damit an und mache dann abends gegen 23 Uhr Schluss.
    Dann lässt man es über Nacht stehen (nicht auf der heißen Herdplatte logischerweise sondern daneben) damit das ganze etwas abkühlen kann und man es morgens in Kisten für das Gefrierfach füllen kann... (es ist dann noch lauwarm da Tomaten sehr langsam abkühlen und bei der Menge...)
